CARROT PINEAPPLE CAKE

Just out of the oven: this moist and flavorful Carrot Pineapple Cake! Perfect for your sweet cravings with a tropical twist! 🍰🥕🍍

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 large eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups grated carrot
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 1/2 cup unsweetened shredded coconut (optional)

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat eggs, sugar, oil, buttermilk, and vanilla until smooth.
  4. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  5. Fold in the grated carrot, crushed pineapple, walnuts, and coconut.
  6. Pour batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
