Ingredients:

  • 1 lb beef stew meat, cut into small pieces
  • 1 cup pearl barley
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions:

  1. In a large pot, heat olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove beef and set aside.
  2. In the same pot, add onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Return the beef to the pot. Add barley, beef broth, diced tomatoes with their juice, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 hour, or until the barley and beef are tender.
  5. Remove the bay leaf. Adjust seasoning with salt and pepper if necessary.
